Diwali Festival Sweets
Badam Burfi (Almond Diamonds)
INGREDIENTS:
1 cup Almonds (Badam)
½ stick Butter
1¼ cups Sugar
1% Milk
2-3 pcs Varak (very very thin edible Indian Silver Foils) (optional)
METHOD:
Badam barfi or Mithai are sweet treats. They form a big part of Diwali celebrations and are often given as presents to family and friends.
Put almonds in a microwave-safe container. Soak in water. Cook on High for 6-8 minutes. Cool.
Peel skin off of the almonds and grind the peeled almonds in belender with milk to a smooth paste.
Melt butter to form ghee.
Take a pan, add 2 tablespoon ghee, and add almond paste.
Keep stirring on medium flame, until it starts to thicken.
Add sugar and continue stirring.
Add remaining ghee by spoonfuls every minute and continue to stir.
Cardamom powder can be added if needed for flavour.
Keep strring until it becomes very thick and leaves the sides of the pan.
Take greased plate. Pour the above onto it.
When slightly cool, cut it into diamond or squares or any other shape.
To decorate, before cutting into shape, cover it with varak (very thin edible silver foils).
Serve.

Weekend Cooking
Layered Salad
INGREDIENTS:
1 head lettuce, broken
½ cup green pepper, chopped
1 onion, diced
½ cup celery, diced
1 10 oz pkg frozen green peas, thawed but not cooked
2 cups Hellmann’s mayonnaise mixed with 2 Tbsp. sugar
1 4-oz pkg cheddar cheese, shredded
6-8 bacon strips, fried & crumbled (may use packed real bacon bits)
Salt/pepper
Parmesan cheese, grated
Serves 8 people
(Must be made ahead & refrigerated!)
METHOD:
Quick Recipe to take to your next potluck, or carry-in: It’s from my own recipe card box, but many people have one like it.
*In a bowl, layer first 8 ingredients in order given.
*Chill for 24 hours.
*When ready to serve, salt/pepper to taste, toss & top with parmesan cheese.

Marzipan Cake
INGREDIENTS:
1 cup Almond paste
2tsp Almond extract
2 cups Castor
Egg White
Sugar
METHOD:
Add the almond extract and the sugar to the almond paste and then knead gently, using the tips of your fingers, with the egg whites.
Once you have smooth mixture, make shapes.
And Serve, simple.
