Chick Pea Balls (Besan Ka Laddu)
500gm Chick Pea Flour or Besan, sifted
500gm Ground Sugar
200gm Dairy Oil or Ghee
1tablespoon green Cardamom or Elaichi, powdered
Heat dairy oil (ghee) until it smokes, then lower the heat.
Add the chick pea flour (besan) and fry on a medium heat until it is a golden colour.
Take it off the fire for two or three minutes, sprinkle the powdered cardamom and add the sugar.
When it is cooled to a comfortable temperature, grease your palms with oil (ghee) and form the mixture into balls. Set aside to cool and harden.
Store in air-tight containers to keep for several days.
