Gajar ka Halwa (Carrot Pudding)
INGREDIENTS:
1 kg - Carrots
4 cups - Full cream Milk
3/4 cup - Sugar
5 tablespoons - Desi Ghee (Dairy Oil) or Vanaspati Ghee (Vegetable Oil)
3-4 tablespoons Nuts and/or Pistacchio, pounded
1/4 teaspoon - Cardamoms (optional)
2-4 tablespoons - Raisins (optional), blanched and slivered
METHOD:
Wash the carrot properly, scrap and grate.
Put some milk in a kadai (deep frying pan) & put the grated carrots. Let it boil till milk is absorbed by carrots (20-25 minutes approximately).
Add some ghee (vegatable oil), sugar, half the nuts and cardamoms in it and stir well to dissolve it for another 5-10 minutes.
Timings vary depending on the moisture in the carrots.
Remove and pour in a serving dish.
Put some ghee (vegetable oil) on it and garnish with nuts, pistachhios and raisins.

Method
Soak green channas. Dry them in the sun light.
Fry them on fry pan. Add lemon and pepper to them.
Add salt and chilli powder to test.
Serve with potato wafers and sauce.
