Chilled Guacamole Soup
2 large Avocados, peeled and seeded
3 Tomatoes, peeled and chopped
2tbs Green Pepper, chopped
2tbs Onion, chopped
2tbs Celery, chopped
1tbs Lemon Juice
2 Green Chillies, finely chopped
a dash of Tabasco suace
300ml of water
Salt to taste
a couple of shots of Tequila (optional)
Cut one of the avocados into chunks. Add the tomatoes, green pepper, celery, onion, chilli, lemon juice and Tabasco sauce to taste.
Blend until smooth.
Add water and salt to taste and blend well.
Using a melon baller cut remaining avocado between the bowls and add a shot of tequila.
Serve topped with iced cubes, vinegar, olive oil and Tobasco on the side.
Pour lemon juice with sugar and a little salt into ice trays, to make cubes which can be used for instant lemonade.
Iced Tea taste bitter? Add a pinch of baking soda to your glass or a teaspoon in your gallon pitcher.)
