Steamed Puddings
Ingredients:
175 gm Flour
1 Egg
75 gm softened Butter
2oz (50gm) Castor Sugar
6 tablespoon Milk
Flavouring - (Cocoa or Ginger or Marmalde or Coconut)
Method:
Grease a 2 pint pudding basin if making a steamed pudding or a deep pie dish if baking the pudding. Spoon the flavouring of your choice on to the bottom.
Basic Mixture:
Mix together the flour, butter and sugar. Make a well in the center and add the egg and enough milk to give a soft dropping consistency.
Pour the mixture into the prepared dish.
If steaming the pudding, cover with pleated greasproof paper or foil and secure the string. Steam for 1 1/2 to 2 hours.
If baking, cook uncovered, at 180C/350F/Gas4 for about 1 hour, until well risen.
Serve hot with custard.
Chocolate pudding:
Add 3 tablespoons cocoa powder, sifted with the flour, or stir 1oz(25gm) chocolate chips into the basic mixture.
Ginger pudding:
Add 1 teaspoon ground ginger and 25gm (1oz) chopped stem ginger to the basic mixture.
Marmalade pudding:
Spoon 3 tablespoons marmalade into the bottom of the basin.
Coconut pudding:
Replace 25gm (1oz) of flour with 25gm of desiccated coconut.
