Pasta Roulades
INGREDIENTS:
2 Pasta Sheet (4 inch by 2 inch) - Boiled
50gms Zuchini
3 Cherry Tomato
10gms Butter
10gms Red Pepper
10gm Yellow Pepper
5ml Balsamic Vinegar
INGREDIENTS: SPINACH MIX
100gms Spinach - Boiled and chopped
30gms Mascarpone or any soft Cheese
10gms Thick White Sauce
10gms Butter
5gms Garlic - chopped
Salt and Pepper to taste
INGREDIENTS: SAUCE
60ml Tomato Juice
Few drops of White Sauce
A pinch of crushed Pepper
1/2 tspn Thyme
10ml Basil Olive Oil
RECIPE:
Spinach Mix:
Saute the garlic with butter, add spinach. Add mascarpone, thick white sauce, salt and pepper, and mix well.
Pasta Roulade:
Using this spinach mix as stuffing make roulade of pasta, cut one roulade into 3 pieces. Make them hot inside the oven.
Cut half of the zucchini into slices and rest into julienne. Saute then with butter and cherry tomato.
Roast and cut the pepper roughly,. Mix with reduced balsamic vinegar.
Sauce
Reduce tomato with olive oil. Add white sauce, crushed pepper, thyme and julienne of zucchini.
Arrange and serve.
