Five Top Starters for the Summer
Gazpacho Andalouse Soup
Mix onion, garlic, pepper, cucumber and bread with olive oil, tomato juice and tomatoes. Make a puree out of the ingredients and strain it through fine sieve. Thin down with water and serve chilled.
Chilled Mint Carrot Tomato and Orange
Make a puree out of the three ingredients and thin down with either cream or yoghurt and water and season with salt and pepper.
These fruits & vegetables help the body retain moisture level.
Melon and Parma Ham Noisettes
Scops of green melon are wrapped with Italian parma ham (or regular ham) and pierced with toothpicks. Serve chilled on a scorching hot day.
The melon cools and the ham adds a unique flavour.
Prawn and Smoked Chicken Salad
Serve prawn and pieces of smoked chicken with iceberg lettuce in a balsamic dressing.
For non-vegetarians this is an ideal starter as it cools the body internally and, the lettuce, which has a lot of fibre, also helps clear the bowel.
Romaine Lettuce with Cirus Fruits
Cut and mix citrus fruits over slices of lettuce, serve with pepper and vodka dressing.
Its light on the stomach, a great appetiser and you can prepare one for an elaborate lunch or dinner.
